That is some sound advice and is good to remember most of the time. Are you sure that the deer are bedding in the timber? I would look for some thicker cover and check for bedding there.

Depending on the food source, they could be in the field all night. If the pattern that you describe is correct, the does should show up from the timber about 1/2 hour before dusk. Working out towards the field. The wind direction maybe more important in your case. Make sure it isn't against you on the way in. Whatever time you try.

I would go in a little earlier and see if you jump deer in the field. If your state allows flashlights, send a beam out into the field and look for green. That will answer a few questions quickly. Chances are, they may even circle back to check you out if the wind is right.
