Ok, I like to.....well experiment a little. No one has ended up in the Hospital yet.

I need some of you that like beans to see what you think about my experement in baked beans.
At this point I will tell you that I have had two bowls with no ill effects. They have passed (no pun intended) my hot and cold taste test with flying colors....but somthing is still missing. The results of the last test are still......well pending lol
Ok, here is Ricks Baked Beans #2
1 cup chopped onion
1/2 cup chopped poblano chili (I like the taste of these)
1 chopped jalapeno pepper (its a start and I will add more later. )
2 cloves garlic, chopped
1 tablespoon olive oil
2 15 ounce cans pinto beans. I will also try the dry packaged later
1/2 cup beer. I used Coronia extra.
1/4 cup sliced softend sun-dried tomatoes (suggestion from my D in law)
1/4 cup packed light brown sugar
1 teaspoon ground cumin
1/2 teaspoon dried thyme leaves
1 bay leaf
1/2 teaspoon salt or as I must use the salt sub.
I saute the onion, chilies and garlic in the oil untill they were tender. Sorry I did not time it.
Mix this with the beans, beer, tomatoes, sugar, cumin, thyme leaves, bay leaf and salt then place in a 1 1/2 qt casserole dish.
I baked them at 350 degrees, covered, for about 35 min. When I checked them there was still lots of liquid so I cooked them uncovered for 30 more min. to remove some of the liquid.
Very good but as I said still somthing missing

oh I guess you can use h2o in place of the beer if you want. I do not drink but I like the taste in some cooked items such as chicken and thought why not in beans.
PS
Also your thoughts on how this would do cook in a dutch oven?
