summer sausage is like a precooked lunch meat. Bologna, salami,
venison breakfast sausage is like what youfrywith your eggs. Jimmy Dean, Bob Evans

I'm assuming that you spelled breakfast wrong. I never heard of breakfats

Summer sausage is a cured semi dry sausage which requires the addition of cure (nitrate/nitrite) smoking, then drying. Breakfast sausage is a fresh sausage, composed of meat and spices. To be consumed or frozen quickly.
