NOW, WHEN YOU HANG DEER, VERY IMPORTANT, HANG BY BACK LEGS, NOT HEAD. LET THE BLOOD FLOW OUT OF STEAKS CHOPS, ETC THRU HEAD. THIS WILL HELP SPOLIGE, IF IT'S WARM, GET THE HIDE OFF. Welcome to the board, but please lose the cap lock. If you are getting hair on the carcass when you skin it, you are doing a shotty job. I personally think if you shoot a deer in the heart/lung area he has already bled out all the blood in the meat you are going to get out.

I gut it and take it to the butchers within 1 hour

I gut the deer where I find it, teletag, drag it near my vehicle and hang, quarter and put in cooler. If possible, I'll wash the meat off as it is butchered if not immediately once I get home. Never had any "gamey" meat yet.
