I just got this from cabelas. It seems to do a nice job fast and is easy to use. I know all YOU need is a $3 sharpening stone. My uncle is like that too but I have never been able to get the hang of the stone or other manual sharpeners I have tried with the exception of the Global hand sharpener for my Global kitchen knives. But this chef's choice is nice! Can't use it with the Globals though. Japanese knives have a different grind angle, it would ruin them. Doesn't matter, they are easy to sharpen and stay sharp for months anyway.

i have the model 110 i only use it for my hunting knife so i didnt need the big one. but your right they are very fast and easy.
