I'm going to be skinning a deer this week and i was just wondering if when you cut the tarsal glands off do you have to tan the flesh side or anything? Or do i just put it in a plastic baggy and save it for next year?

First, you'll need to taste it and make sure it isn't spoiled.
Place in Ziploc Bag.
Hide in a pot-pie box, so your wife doesn't see that you have smelly deer glands in her freezer. She WILL KILL you for such an act.
Unthaw, boil and eat. Add tabasco to taste.

yeah, they're great to eat.
Nothing says "I love you" like a chocolate-covered tarsal gland to the Misses on Christmas Morning.
Seriously, I freeze 'em and use em too. I salt down the fleshy side before freezing, and do it again after unthawed. I use cable-ties to attach them to my portable treestand.
