We built one about 4 years ago, about 10' x 10'. From the concrete skinning area we have a rail slide that goes right in the cooler. The unit came from a restaurant that needed a larger unit. It will keep cool at about 35 degrees.

I am interested in this topic as well. I am just working out the figures of the amount i will spend on processing for deer, elk, beef etc over the years and i am seriously considering creating my own operation. Beef need around 10 days to hang so in my situation a cooler is a must. Building the cooler is one part, finding decent priced processing equipment is another. For a band saw, sausage stuffer, mixer etc you are lookin at some serious coin. But overall i think the investment will pay for itself.
