Well my deer season feels like its been long over, and now that the Holidays have come and gone, its time to get to work!
I made up the first batch of sausage yesterday, and today I'm smoking it! 37 links!
I like doing it all, from the scouting to the hunting and even the processing too!
I've got several more batches to make! Makes me reconsider sometimes just how much fun the processing really is, but I'm thankful for the success, and I'll have all winter to recuperate! I hope everyones season was as good as mine this year!

What size rolling papers you use?

I'll be making sausage this weekend,it's alot of fun.My kids love it.

Glad you mentioned the sausage JagMagMan, it reminded me to pick up some sausage skins on the way home!

Taz don't forget to let the skins soak good! I soaked my first ones in too warm of water. It ended up cooking them and they busted real easy, it made for some tough work, but I've got it down now for the second batch!

Well I have never made my own sausage before, in case the person I buy the skins from doesn't know, how long do you soak the skins and do you do it in cold water?

The ones I get are soaking when I get them.

Yeah man!!!

Had the smoker fired up this past weekend myself. Smoked up 9#'s of summer sausage and 3#'s of polish sausage. GOOD STUFF!!!! I'm trying to give some of it away to share in the bounty buy my wife keeps guard over it.:D

Taz - soak in warm water for about an hour before stuffing. Works out fine for me.

Bad shot is right! Soak in cool water for at least 45 minutes to an hour!
The difference is like night and day. If they are not ready, they won't slip on the stuffer and will tear very easy! Makes for some hard work and frustration, when it should be easy! Good luck!
