I made a five-gallon plastic gas-type container with a faucet at the bottom. I've never gut-shot a Deer. My main malfunction is piercing the bladder. I've never worried about some random Deer berries. All my meat gets cooked well.
I'm not all that good at gutting, but I fail to see how somebody could screw it up that badly and leave guts in there. I always carry a little twine with me, tie off the esophagus high up in the neck.
The shape of the tip of the knife makes the process a lot easier, drop point works best. The tip on say a Buck knife 110 digs in. I gut on the ground. I've never hung one to gut. Grass actually works pretty well for cleaning the cavity out until you can get to some water to rinse.
I personally worry a lot more about parasites than I do random body waste.

If you are careful on a nasty field dress, the worst thing that is affected are the tenderloins on the inside. I have never done much with the ribs and the flanks. The skin should protect the rests if you leave it covering the inside of the hind quarters. I quarter my deer at our camp, and have the meat on ice for several days.
Between a nasty gut job, and skinning, wash hands, or change rubber gloves.

A gut shot is a term used to describe the practice of using a sharp object (usually a knife) to cut open the stomach cavity of a live animal. This is done to remove the internal organs and then clean them out.
