Worried about temps.
Hi... I got a deer last evening and am just now able to get to cutting it up.
My question is the low temp last night as around 45 degrees. I assume it will be fine. ( I am quartering it up today) Just want to be sure it is okay. I assume it would take awhile to spoil. It has been less than 24 hours and I plan on quartering and put him on ice. Thanks. Usually it is much cooler when I take the first of the season. Just want to be sure. |
If you skinned it before you hung it up it should be fine at 45 degrees but get it chilled though as soon as you can. You can allways skin and quarter a deer and ice it up in an ice chest if you don't have a walk in cooler when the weather is not cold.

bacteria starts to grow on meat at 41 degrees.... I always shove a couple bags of ice inside one if it is going to to get in the mid 40s and up..

It hung last night and it ended up around a low of 40 degrees, I skinned it an quartered first think this morning. Only hung overnight, and have it on ice in coolers now. No sun out this morning and I got it done early so I'm guessing it it should be okay. Wish I would have skinned last night however. Thanks for the input I appreciate it.

I didn't have it skinned last night, was midnight by the time we finally got it dragged back home. but I skinned and quartered it early this morning and put it on ice. I think I'm alright, hope so at least. It smelled and looked fine. Thanks. |
I think if it already was 45 and going down to 35 I would be fine. But 50 or 55 going to 45 would make me want to skin, quarter, and place pieces in a freezer or on ice. I use a chest freezer. Then, debone the next day. The meat partially freezes, which is OK. And I never worry about spoilage. In your case you "probably" will be OK. For me, I like to be sure.

Your fine man, Dont worry about the meat at all. Weve had to do somethin like that quite abit. Weve never had a problem.

yeah you'll be fine just put ice in the chest cavity like they said and hang the deer head down that way the heat escapes through the top of the opening. and if there any bugs around like blow flies wrap it in a deer bag they breathe so the heat gets out and protects the animal. enjoy your harvest !!
