Proper FIELD CARE is a LOT more important than the actual size of the carcass! Sounds like a great excuse to kil a lil' deer though, whatere floats your boat. Also, I can assure you that the still relatively young (2 1/2 year old) buck that you have their certainly shouldn't taste tough by ANY means! Unless you left him ungutted for hours or let 'em sit there in your yard for a long time that should be very tender venison. :s2:
So I guess veal, and leg of baby lamb are just a figure of my imagination. Deer was properly field dressed, and processed, there are over 200 years of deer harvesting experience in the group I run with. The tenderloins were removed right away, and they were tough. The steaks I had tonight were not so tough. Anyway it will not go to waste.
