The difference is you will be pushing a .284 diameter projectile with about the same amount of powder you would use for the .308. Both calibers will definitely do the job on either game. The only difference being is the .308 would have a better ballistic coefficient and will buck the wind a little better but I do not think you could even tell the difference. Ballistic ally the .284 is better because of its flatter trajectory and down range performance so if it's distance that your looking for the 7mm-08 would be the choice of most. If it's knock down power your looking for they both are adequate to get the job done however, I would choose the .308 myself. I feel it is really a personal preference thing.

Nothing like a 168 grain Barnes TTSX powered by 44.5 grains of Varget lite by a CCIBR 200 primer in a Norma case to put a hog down in his tracks!

dude get a 300 ultra mag thats the ticket. but if your set on those two get the 308. its a better round more common and its a 30 cal based round so it really accurate and flat even over long distance while still retaning energy enough to bring down any deer or hog. 308 is one of the greatest rounds ever divised

I would probably go with the 308, BUT, nothing wrong with the 270 that you already have either.

Actually .284 bullet offers slightly better BC then the comparable .308 bullet. In a apples to apples by this I mean a 140gr/.284 is equal to a 165gr/.308 - same SD.

308win and flat aren't 2 words I'd use together. The 7 08 has the flatter trajectory. 30 cal means accurate, don't agree with this either plenty of other calibers that are accurate. Not to mention it has more to do with the guy behind it then the cartridge inside of it.

.308win is a good cartridge, just don't agree with your logic.

In terms of the poster either will suffice.

The 7mm-08 and 308 are more than enough gun for any deer or hog in Texas. In fact both are enough gun for most if not all hoofed game in North America. You already have a 27 caliber gun, the 7mm-08 is 28 caliber and the 308 is 30 caliber so there is not a whole lot of difference between the 3...

I am a big fan of the 7mm-08, the only advantage to the 308 is the number and availability of different loads..

Either caliber will work for the deer and hogs we have in Texas. My personal choice would be the 7-08, but you can't pick a wrong one from your two choices.
