My field dressing kit includes my Leatherman Supertool (3.5 inch clip point blade (not serrated) and saw blade), a 3 inch diamond stone to keep the blade razor sharp, purple nitrile gloves (I don't like latex) and a small pack of handwipes. ***KEEP THIS KIT SIMPLE***
I have gutted deer both ways and found that I do a much cleaner job when I saw the pelvic bone into (takes about 30 seconds with the saw blade).
To butcher the deer, I hang it with a gambrel (Walmart) in my garage. Use the same Leatherman's tool to cape the deer, remove the shoulders (debone later when processing into cuts), and debone the rest of the deer while it is hanging. I use a hacksaw to cut through bones for disposing or removing the skull plate. When making the actual cuts, I frequently use my 8" Kabar combat knife to butterfly the steaks.
