I've shot deer with both ( mostly 1 1/2 & 2 1/2 year old does ) either gun leaves just as dead, BUT the 7mm-08 leaves a BLOOD trail.
The .243 seems to put a pin hole in em. I like the .243 for yotes, but I LOVE my 7mm-08 for trophy does!
Some of the best blood trails I've ever seen came from my dear departed 6MM Rem. Which is basically the same as the .243!
Some say that the 7MM-08 is the about as close to perfect of a deer cartridge that you could get! I senen the 7MM-08's results, and it would be hard to argue that its not close to perfect!
But, the .243 will take any whitetail a 7MM-08 will take.
Either will do a good job, if you do yours! Good luck!

I have shot a lot of Deer In my 61 yrs. with my Parker Hale .243. I have only had one run, about 40 yds. All the rest fell over dead, and not a step. I shot most just behind the shoulder to keep from messing up the meat. This is a great round for everything I hunt, from Hogs to Deer.
