I'm not eating a stinking bloated deer!!! 30 degrees the low or the high?

I've eaten a deer left out overnight inslightly warmer temps than that, but it sure wasn't bloated and it didn't stink when I got him.

IMO, unless you think the stink is a gutshot, better safe than sorry.

i've seen deer bloat within 2 hours of of being killed. even in temps below forty. as long as it wasn't gut shot and the temps were what u said they were. it will be just fine. i don't think a deer will bloat witha hole in the guts. i've gutted 2 bloated deer this year. both found within 2 hours of dieing one less than a hour. for some reason the stomach fills with gases after dieing. i accidently poked a small hole in one stomach while gutting it. stunk real bad. but the meat was just fine.

Before the stinky meat is processed sprinkle heavy with baking soda then rinse and dry well. This should nuturlize the gasses that made the smell.

go ahead and enjoy. The meat is just as safe as any beef you would get from the store. All that happened was the meat aged which is good because it will break down long long protein strands making the meat more tender. I've spent some time in the meats lab at Ohio State and they have already aged beef carcasses up to 6 weeks and still eat it. Although when a beef is aged it is under controlled humidity and temps which helps to slow the aging process the animal will just age faster at higher temps and higher humidity. As long as you cook your meat to the right temps and there was no release of digestia onto the meat everything will be safe. Sorry for the length but wanted to make a worth while post.

Should be good since it never warmed up. I have bow killed a quite a few deer thatweren't found until the next day and they were all fine except for one.I field dressed it and washed it all out and processed it. That deer always tasted funny to me and I finally threw it all out after trying 3 or 4 meals. I am not sure if it was just me being overly sensative to it or not, but even my wife didn't care for it and we eat deer and elk meat all the time.
