Would like your opinions.
For the best dinner tabled venison
Do you hang itfor a few days or longer.
Do you butcher it ASAP?

All assuming it is 40 degreesor less andnot warn out.'

hang it for a couple days then butcher it yourself

I quarter them right off the bat, and put the meat in a cooler on ice. Drain it twice a day for a week, then do your processing.

I usually butcher it right away and the wash it off good, to make sure no stray hairs got on it..and thehn in the cooler it goes very similiar to the poster above me.... It is usually far too warm in my neck of the woods to let it hang for any period of time..although this year is cold.

I give mine to the processor as soon as I kill it.
