On a quartering to shot, it depends on the angle where I will hold. If it's close to broadside, I'll hold for behind the shoulder, or the rear of the shoulder. If it's like a 45 degree angle, wait for the deer to look away so it's neck is exposed, then hold for the base of the neck, where the neck meets the chest. If he's nearly facing you, wait until he turns, then pick a spot on his chest and fire, if he doesn't turn,just let him come closer. The key is to have a decent sized, high percentage target.

The main reason to go behind the shoulder is to damage less meat. If you want to put him down right where he stands put it in the shoulder. I prefer behind the shoulder, but sometimes you don't have a choice.
