I've had great luck with Winchester Ballistic Silvertips on both whitetails and muleys. I like the flatter trajectory. You don't have to hit 'em too hard if you hit where you should.

What gr 30-06? Well... I don't think it matters a great deal, as 30-06 is a LOT of gun. I'd use 150gr of whatever was onsale and grouped okay in my rifle. I used Rem Core-lokt most the time when I hunted with a 30-06.
Hunting pal of mine uses 165gr Core-lokt... he claims the deer travel less than when he used 150gr. So there you go.
I use a muzzleloader.

My '06 does not like anything other than 180 grainers.And she has always been 1 shot, one kill as long as I have been hunting.

"Back in the day" when I had my 30.06 I used 150 grain. After a few years I noticed the bullet always passed through and sometimes the deer ran off. One time my antelope ran two miles before I found it expired. I switched to 180 grain and the deer never went pass a few yards after being shot. Of course, bullet placement is the key and they can run a long wayswith a heart shot. MV out!
