Question about deer meat.
 

Hi I got my first mule deer this season. :)It was back sometime in November I think the 7th or something. We have had it cut into strips for jerky, etc. but we haven't taken it into a butcher to have the meat actually made into jerky. We have the meat in air tight bags. There issome ice in the bags. Is the meat still okay to get jerky made out of it or is it finished.:(

I have taken meat that was over a year old in for jerky or sausage with no problems at all.Venison is very lean,and if stored properly,does not go bad for a considerable time.

Just make the jerky good and spicy. I think it will be alright.

If I have leftover meat a usaualy make jerky out of it. If you have a good vacmun sealer venison can last up to two years.

I don’t see any reason why the meat wouldn’t be good. Better to try it then through it away as long as it doesn’t smell bad...

A guy at work cuts his own deer up and then waits until spring to make sure when he takes it in he knows that he is only getting his, and his deer has not been mixed in with others. You should be ok.

I would say dont take any chances. I will give you my personal address so you can send it to me and I will take it to my lab and test it for you.:D:D I have a specialized sytem for testing that involves a taste test and other top secret things. I would rather see me get sick than you.I cant gurantee you will get any back. The last couple testing batches I did for some reason ran off.:D:DNaaw man its okay go ahead and eat it.

I do my own processing, prefering todo jerky, grind, etcin smaller batchs vs. all at one time. As mentioned if packaged properly it lasts and does not effect the quality of the product.
