Do not hang it by the head hang the deer by the hind legs so it stretches the main hind quarter meat out and makes it much easier to bone out and for better tasting meat.

So what one is better to hang the deer by the head or legs?If i was mounting the deer head what would be better?

I always hang legs down, being taught by a butcher I assumed this was the proper way to do this task. To me is makes more sense to hang from the hock with grambel as I skin my animal asap to allow proper cooling of the entire carcass. Plus this way I can remove all the portions that are not processed for the freezer (hide, head, legs, etc) and just age the meat. If your doing a shoulder mount head down is the way to go for hanging.

too hot here in florida to hang a deer (outside of a walk in cooler). even if you could, the green blow flies would have their way with it. i field dress, skin and quarter it up. i then place the meat in a large clean ice chest where i dump 30 pounds of ice on it and close the lid. leave the drain plug out of the ice chest so as the ice melts and mixes with the draining blood, it will not soak back into the meat. also, check the level of ice atleast once a day and add more if needed. like someone said before, if left on ice, the meat will be fine for up to 7 days.

I hang head down and let it hang that way for 3-5 days. Almost always cold here in deer season so no problem with spoil or flys.

hanging by the head makes the antlers look bigger if someone should drive by:D.
