From what ive experienced and been told the rib meat isnt very good and not worth the trouble of getting it off.

Many do take out the rib meat for grind in sausage and some do racks of ribs (this you'll need a saw). However to get it out the meat simply take your knife and cut up/along the rib bones to remove the intercostal rib strips of meat. You'll find they arepretty meager and usually loaded with talc, the main reasonI don't bother with this cut on deer.

most people i know grind up the meat for burger or sausage. you can just take a fillet knife and run it between the inside of the ribs and cut it out.
