The tenderloins are inside the chest cavity.
The backstraps are what runs along the back bone.

Ok we have the Backstraps or loins straight. Yes the Tenderloins are inside the cavity, they are at the very rear of the cavity. about 10 to 12 inches long each. side by side, may be 1-1&1/2 inches in diameter. These must come out before you cut the hind quarters from the back bone of you will cut 1/3 of them off. Phil

Yep they sure is good eat'n. In my neck of the woods they call the backstraps (Loin) and the inside Loin (Fish). I guess the inside loin kinda looks like a fish when removed?
When we cut up the backstrap (Loin) we butterfly it, by that, I mean split the cuts almost in half opening it up making a larger serving portion.
How's everyone else do it?

We cut our backstraps like that too. We call them butterfly's. MMMMMM Good.
