question about geese

Default question about geese

So I am still pretty new to waterfowl and I heard that snow geese taste like crap(for lack of a better term). Is that true. Compared to canadian there just is not comparison? Just curious.

Snow geese aren't the greatest eating, but I'd say they're as good as Canadians. I don't care for either one very much, though I think that Specklebellies are very good eating.

If you want to cook a snow in a pretty good recipe, try 'goose gumbo'. Get a recipe for Turkey gumbo soup, and substitute goose for the turkey. It's pretty good that way.

A crockpot full of legs and thighs with some onion, mushrooms and some spices is pretty hard to beat. If in doubt, you can always make jerky.

Thanks guys....my duck jerkey was a disaster. I over seasoned.....NEVER DO THAT!!!! I will probably do jerkey again. It is easy, and honestly.....who doesn't like good jerkey?

I used "Hi Mountain" jerky cure/mix. Easy to use and it comes in different favours

JERKY IS THE BEST THING FOR DUCKS AND GEESE, HERE IS A RECIEPE I USE.FOR 3 LBS.
1 TBSP SALT
1 TSP PRAGUE POWDER #1
1 TSP ONION POWDER
1 TSP GARLIC POWDER
1TSP GR. BLACK PEPPER
1/4 CUP SOY SAUCE
1/3 CUP WORCESTERSHIRE SAUCE

Last year I smoked canada and snow geese at the same time to try and taste a difference...I didn't notice one. Smoking the breasts tasted amazing. We wrapped bacon around some of them and that tasted pretty good too.
