RE: suggestions on cooking the bird

I cooked a young hen once in the following way. It was the best turkey my family ever tasted and we ate the whole thing in a single day.

1. Fully skin
2. Smear softened butter all over the inside and outside of the bird.
3. Salt & pepper the whole inside and out
4. Stuff it with whole onions, carrots, celery, scallions,.....any other vegetable you like
5. Cover in tin foil and cook at 350 until done (check the inside often after one hour)

The veggys get hot and permeate the meat with their flavor. It seems to steam with veggy juice.
