This is what I do...and its pretty tasty for a wild bird...but some may think its plain. First of all...it is plucked and kept whole. Then I inject the hell out of it with melted garlic butter (just melted butter with garlic powder mixed in) When i mean inject the hell out of it...im talking for an hour til its seeping out. Then I have a turkey frier, i dip that bad boy in according to the weight and MAN that is good. I havent tried it with just individual parts or batter yet. good eating

i get corn meal, brd. crumbs, flour, salt and pepper, louisanna cajun seasoning( any will do, just a tad for zip), season to taste all in a big ziploc....then i take the meat out of the fridge and dip it in egg and milk, put it back in the fridge until chilled, then i do it again, then deep fry it....it's really good....and it's not bad with sweet corn mix instead of corn meal, but dont over do it , it will make your meat sweet, cornbrd. sweet , i didnt do it, a friend of mine did , but i ate it anyway :D

I marinate the breast in lemon garlic sauce. Then I cut them in strips and grill them about 80 % done. Then I cut them into bite size pieces and wrap them in bacon and broil them. Serve them up like appetizers.

Rochelle,

I do mine very plain. I d-bone and cut into finger strips, salt, pepper, and flour. Then pan fry it. Usually have a pan of biscuits and a bottle of homemade cane syrup on the side. You ought to hear all the sopping that goes on at our club when this is on the table, (sometimes I might put a pot of rice on the table just to quiet things down).

I also take some of the strips and make a pot of turkey and dumplings, never any to throw out.

Another pot I make using the dark meat of the turkey, I take the dark meat, 4 or 5 squirrels, plus a couple of wood ducks, throw it all in the same pot with some long grain rice, add 4 or 5 cans of chicken broth or cream of mushroons, doesn't matter, put a pan of cornbread on the side and it sounds like a bunch of hogs going to slop when I put it on the table.
