I always leave the skin on when I deep fry. it helps to lock in the injection sauce I put into it and the natural flavors the turkey produces.

I agree with BL, let the skin on to hold in marinade injections.

I'VE TRIED IT BOTH WAYS AND LIKE IT WITH THE SKIN ON, MEAT WASN'T DRY

Definitely SKIN ON! It's the best tasting part of a fried bird. Healthy? Come on! You're frying it.

Actually, frying is one of the best ways to prepare a turkey, even a store bought butterball. It's the only way of cooking one that my family will eat the whole bird. Otherwise we end up throwing some out.

I inject Ranch Dressing then coat the outside with Tony's cajun seasoning.

Skin on it keeps the bird from loosing all of teh yum yums you just jabbed in him.
