Preserving entire legs (from below joint)
 
I am currently workng on a project that involves preserving the entire leg. I have read several posts regarding preserving spurs and other parts of the turkey, but no info on the above. Please let me know a step-bystep method to doing this. I read in a book somewhere to soak in a saltwater solution. It gave little detail as to the amount of salt to use in the solution and what to do after that. Please help. I killed my bird Saturday and have been letting it soak in the saltwater solution, but I am worried that this method is wrong. Time is of the essence, so please respond with any info. Thanks.
