First off, great bird! Second, what you need to do is cut off the fan, trim as much meat off as you can, and spread the fan out on a piece of cardboard in the position you want it to dry in. Pin it down to the cardboard to hold it in place and cover the base of the fan where you cut it off with borax. You can get it in the supermarket in the laundry detergent section, its called 20 mule team borax. Also, trim the meat from where you cut the beard off and cover that in borax too. Let it dry for a couple of weeks then worry about putting it on the board. Most of those kits come with instructions, its real easy to mount them but you need to make sure the fan dries out in the position you want it to be in.
