Cleaning a deer rack?

I found the full carcass of a deer I was hunting (hit by a car unfortuneately) and want to clean up the rack. It had been lying in a swamp since last fall and so the rack is starting to green up a little. It seems stained in spots and I can't get it back to the natural color. What can I do to get this looking normal?

There is only the beginnings of mice damage in a couple spots but I assume I can smooth those parts out by sanding?

POOP ??????? I use paste brown shoe polish to bring back the color. Just a little brushed on them then wipe off.More if you want it darker
