Default Coyote Pelt / Preservation

I have no Taxidermy in my background and have only seen finished products. How hard would it be to preserve a Coyote that was shot, for a newby. Im not sure how to " skin " "Pelt " etc. Does anyone have a link to show from the time of kill to the time of presentation?
Id love to do somthing more with my kills aside from eat them (Not Coyote lol)

What I would do is see if you can go to a local taxidermist for an overview of what they do or buy a taxidermy book.
