I have always done my own, besides the normal cuts I make a lot of jerky and plan on getting a grinder for sausage and burger.

Shoot this time of year around here a good butcher is hard to find anyway and then he is swamped.
I got a new sausage stuffing mix I'm going to try tonight. Thats one thing about making your own. You can change anytime.
