I prefer them fried to anything else. Not the best health wise, but its darn good eaten!! Today was the first day of bow season and we had torrential rains an winds. The deer wouldn't be moving much anyway so I fixed up a couple of my fox squirrels above.

Here is how I like squirrel.
Boil them in water with a little apple cider vinegar until tender and falling off the bone, then debone
Or cut up and fry like chicken.
then put in zatarain's cajun jambalaya rice.
It is Yummy.

I do the same when cooking them then roll in flour an fry. Your rice recipe sounds good, but I can't do spicy anymore...I will look into other rice meals that might work for me though.

I like to put squirrels in the pressure cooker for about 45 minutes, collect the meat, shred with kitchen shears, and then use the shredded meat to top a salad. Sometimes I'll add some sliced venison steak and turkey lunch meat and call it a "3 animal salad".

For me, it's not so much gaminess as it is toughness. Excepting a couple little ones, I haven't enjoyed any squirrel that wasn't cooked in a crock pot or pressure cooker. Then again, I find a lot of chicken breast unpalatable for the same reason.

Reads like a squirrel recipe thread.
My favorite is to leave the squirrels whole wrap them with bacon even stuffing the body cavity with bacon and bake. I think the bacon fat prevents the dryness a lot methods of cooking causes.
