That's pretty slick. I never tried that but will. With pheasants I do something similar... I lay the bird on it's back (bird's head away, tail towards you), spread it's wings and stand on them and then grab it's feet and pull straight up. The breast and wings are separated from the rest of the bird and then I cut the wings off with a scissors. Takes about 15 seconds a bird.
