Depends on how they have been shot, but if the body is in good shape, there is a technique that is unbeatable in my book. I'll try to describe it to you. Hold the rabbit belly up w/ its head pointed at you. Grab it w/ both hands right behind the front legs and start squeezing the entrails toward the rear. Keep applying all the pressure you can and work your hands toward the rear of the rabbit. You should here kinda a slushy popping sound when they break out of the rear end of the rabbit. Then, you kinda snap or crack the whip type flinging move w/ one hand and the entrails should be laying on the ground. Often the heart and lungs stay in, but they don't smell or turn the meat as fast as the other stuff. Good luck!
