Well, I was using slugs, and it was my first deer. I wanted it to have a head..
Plus, I just wanted to finish it quick and its head was moving around so the heart was easiest.

My guess would be because sticking them through the heart or lungs may not kill the animal instantly, which with cows could become very dangerous.
