The Monticello area is in the South East, I do know that. I think that Fishlake is in the Southern Unit, but don't quote me on that. You can check that boundary at the Utah DWR website...

Hey, what can I say? I enjoy the taste of "gameyness" and I find that deer fat is a good source of this. I don't find it foul, rancid, etc....I just find it as a concentration of the flavor I love in...

Personally, I like only a 10% fat addition(and venison fat if possible....then wild boar, but pork works just fine too). One of my favorites is a bleu cheese apple with caramelized onions I created...

Another thing to assist with the fly/bacteria problem is to get a citric acid mix and spray it onto the meat. It lowers the pH level to a point where it kills bacteria and fly larvae.
