To me it seems very similar to one of the back strap tenderloins.

We took one out of my archery buck a few years ago (3.5 yr old), and it seemed to be a lot harder to chew than one out of a doe.

All I do is cut it out of the deer and let it soak in water in the fridge over night. The next morning I take it out clean it out really good and cut it into steaks. Throw into some flour and into...
