Freezer burn. You could try vacuum sealing the meat. We wrap in freezer paper, though and don't have any problem. No need to soak deer meat. In fact I would advise against it .

Generally a bigger, thus older buck will have more rounded toes. I think the nature of the mud has made the tracks look misleading. Could be a nice buck, just not necessarily a monster.
