Are you talking sausage with the spices added or just ground meat? With pork added and ground I like to use within 6 months. But a good vacuum packer makes it last a bit longer.

I built several of these and they work awesome! On cameras that have no nut on the bottom I used a radiator clamp to hold a piece of 2x2 with a T nut inserted in the bottom.
