Prong collars aren't bad, and they don't hurt the dog in anyway (if worn properly). There's not really an "alternative", but you can try a rubber prong.

St. Bernards and Newfoundlands aren't really the best hunting dogs. It's going to be real hard to find a hunting dog of those breeds. Labs and Goldens make for great hunting dogs.

Color doesn't make one difference in how a dog is going to turn out. Color is just a preference, go with what color you want. I don't ever go with color when picking a dog, but to each its own.
