Anyone have good instructions how to do this properly? I know I will need to remove meat from the wing and can do tail fans no problem.

I would do as blackelk said. Tag the quarter with evidence of sex, then keep the other portion in your pocket. That way carcass tag is on the "carcass" and the other portion is on your person.

Still doesn't answer my question. Check out some videos on youtube, there are many ways to hunt them and ethics are on a hunter by hunter basis. Not sure what your point is.
