Sounds to me like your wife's anchor point is too high on her face. Also if her older bow was quite a bit long ATA and her new bow is a short ATA and your set the peep heights the same for both bows...

At 52 lbs you could use the Gold Tip 3555's cut to 28 inches long. However if your bow is set at 57 lbs then you would have to cut the arrows to 27 inches long for them to spine out.

Carbon express is another one that needs to come up to date. Their 250 and 350 numbers have nothing to do with their spine being the 350 is actually a higher spine rate than the 250.

To do walkback tuning correctly , you ONLY use you 20 yard pin for all distances. As to how far back you can shoot is going to depend on how tall your target butt is and how flat shooting your bow...

on a bow marked 50-60 lbs means you can adjust the weight anywhere from 50-60 lbs so 60 is the max. On a 60-70 lb bow it means that 70 is max poundage but you can adjust it down to 60 lbs.
