Firstly Zimbabwe has nothing to do with South Africa, two very different countries.

South Africa is very safe and does not have the problems that Zimbabwe has.

I have been to both countries but not hunted in either. I would not set foot in Zimbabwe now until Mugabe is kicked out. I suspect that most of the hunting ranches have been expropriated anyway.
South Africa on the other hand is a great country, safe and lots of game. I would avoid downtown Johannesburg but anywhere else is OK. You would have a great time there, very civilized.

I've several Zim friends, a couple of whom have recently "lost" their farms. I would avoid Zim as a destination. SA, on the other hand, is somewhat safer. As an ex-pat now residing in Canada, I visit fairly frequently. My most recent trip was July this year. The disturbing trends are the obvious growth in visible unemployment and poverty and the escalation of violent crime. Hunting destinations have not been targeted (yet) and remain safe. For general touring, though, be circumspect and careful and try to avoid known higher risk areas.
Just my opinion, though.
