I have catfish fillets marinating in hot pepper sauce right now. They will be floured and fried tonite and will be served with french fries and corn. Should make a right tasty supper.

Frijoles refritos con chorizo seca, rice and cheeps. A little Green Mountain Gringo salsa on top too. :P

Whipping up something like Fabada today. Basically its a Spanish bean stew minus the morcilla (blood sausage) because im not a fan of it. I might add some chickpeas but probably not. This is probably closer to ollla podrida if i used other beans like reds. Im out of my good semi dry chorizo at the moment and its not worth the drive to little Mexico just for some sausage.

50/50 Great White Northern and Peruano beans
Couple pieces of smoked pork neck bones
Almost 100 grams of beef Polish sausage
A couple links of a green chile pork sausage
Onion, celery and carrot.

This is my basic seasoning blend for white bean soups/stews. If you dont have aji panca you could use a very tiny amount of habanero or a heatless variety.
1.5 Tbs Kirkland No Salt Seasoning
2 Tsp Aji Panca Powder
2 Tsp Paprika (mild)
2 Tsp Ground Cumin
2 Tsp Kirkland Granulated Garlic
1 Tsp Ground Tumeric
1/2 Tsp White Pepper

Last night we had shrimp war bar with rice. It was delicious and we have a small portion left over which will go with our sirloin tip steak cooked on the grill.

Didn't snap a pic, but i made 3 cheese (provolone, American and chedder) Black Angus butter saturated and caramelized bacon cheeseburgers over hard lump charcoal on the girl for the family on this memorial day.
