How much from an average Buck? How much from a doe,in Pa.
I have heard of butchers keeping back a little for their self!

I usually say 50% of field dressed weight, that is mostly correct. For more accurate info, scroll down the page of the link till you see the explaination of weight to weight. A lot of people expect more meat than they are getting and accuse the butcher of keeping some of their meat. Although it sometimes happens, it isn't common to happen.

I had a 120 lb (after field dressing) buck that I took to a processor. I was able to get about 40 lbs of sausage, ground venison, tenderloin, and backstrap. Happy cooking!

I would say not more than 40% of dressed weight.
