Good advice above. The deer will still hit the fields even if no cover crop is planted. The harvesters leave bits and pieces all over the place and the stalks from the crops will still be there. Have seen deer eat corn stalks all the way to the ground . You might also give them a call and see if they have an off season field. Alot of farms around here (In NC) will grow Soybeans and such and just till them back into the ground to return nitrogen and nutrients back into the soil. If nothing else you can call them and see if you send them some money if they would dump a couple bags of corn in the field before you get there so that way you have a baited pile the deer will most likely find. Acorns will be there but by then will have snow cover and the deer will dig up the snow for acorns still left.

I live in Cincinnati and would be willing to scout the property before you get here. Of course i would be expecting to hunt it with you lol. I hunted the corner of a cut cornfield well into December last season and was seeing deer every single time i went out. Around that time of year i would focus more on locating bedding areas or heavily used trails. Baiting is legal here btw.
