Default Hog processing, what to make??

Hello everyone

Im off for a hog hunt on feb 17th and I thought I would try to come up with some ideas for the hog that I hope to shoot.What do you guys enjoy? Heres a list of some of the things I had thought about

Sausage
Bacon - Is there much bacon on wild hogs?
hams
tenderloins

Can you actually make jerky or snack sticks?

I tried to do a search for some info but it didnt pull up anything.

Some hogs, usually barrows of domestic blood lines have enough fat on them for bacon but in general most of our wild hogs don't have it. We usually cut out the backstraps for chops, maybe a ham to BBQ or stew, and grind the rest into sausage. Mighty fine eating if it's a sow, young boar or a barrow! Enjoy!

From wild hogs I do:
Pork chops
pork steaks
sliced shoulder steaks
ribs
pan sausage.

We're doing that this weekend with two whole hogs.

All it takes isConstruction Blocks and Chain Link materials. Make two exactly alike and clamp them together to hold the pig.Make the side pipes Longer to useas Handles.
One section with the pipes and one section without!

Im gone monday for some wild hog infested farmland in mississippi.Ill be gone for 3 weeks so ill post pics of pigs when im back.
