Either splay him and spit roast him, or pack him and put him in the ground. You might email Reb. He has a great recipie for spit roastingthem. I used it once at a camp out and it was very good. It would be great for a hog that size.
What do you mean about put him in the ground? Haven't heard of that before and just courious.
Dig a pit in the ground, burn a bunch of wood down to coals, place a piece of sheet metal over the coals, wrape your pig in foil (after you spice it as you wish), place pig on the sheet metal then place another piece of sheet metal over it, then add dirt back on it to hold in heat or you can add coals you took from the pit prior to placing the pig in it. Kinda like a hog clam bake.
