At the ranges in your initial post... flip a coin. Not a penny's worth of difference between the .270 and the .308 out to 250 yards.
At 400 yards, the .270 is slightly flatter, so may be the better choice.
Where will you be hunting in Texas? I've had great results in the Hill Country with my .243...

I'll not extoll the virtues of the .308 Winchester, but I'll knock on the .270 a little by saying if I wanted a .270, I'd get a .280! It's an upgrade!

i was born and raised in the texas hill country. people i know use cartridges from a .223rem all the way toa 30-06. i use a 243 and 30-30 which are awesome for the whitetail deer here in the hill country. but if i had to choose between a 270 and a 308, i would take the 270 since you can shoot flatter at longer distances if you had too.

Out of those 2? If you were hunting deer and other big game animals i would go with the .308. But if you were going to hunt only deer with one of those I would go with the .270. The .270 is one heck of a deer gun. Now if youre talking about shooting at little longer ranges (450+) out of those 2 I would go with the .308 for sure. Little less muzzle blast. But its up 2 you it doesnt really make a bit of difference.

I too hunt Texas, and have hunted with a .308 for the last 13+ years... For me, if it's within 300 yds, and the wind is cooperating, and I do my part, it's backstrap time....
My wife is carrying a singleshot in .308 this year. I'll be carrying an old .30-30 myself. The new leverevolution ammo intrigued me enough, and the rifle shoots plenty well out to 250 yds with it.
IMO .308 is the ultimate Whitetail round, 150 gr or 180 gr Remington Corlokts whichever the rifle likes more. Good out to 350 yd if you've got the nerves for it.... There's a reason It's been the sniper standard for the last 40 odd years. There's alot to be said for the difference in intent and mentality between a military sniper and a deer hunter, but the round stands on its own merits...
Most of the rest of my family hunts with .270's and there is no difference between the level of mortality amongst the hundreds of deer consumed on our ranch, over the last 50+ years. My dad did have to shoot a stray blackbuck antelope 5 times with a .270. 4 of the five great shot placement. The last being a head shot that finally put it down.
Just sharing my experience. Ultimately, they're both fine on whitetails... I agree with the one fellow about the coin. Spend more time considering the rifle model and the type of glass you're putting on top.

Thanks all, I took everyones advice and flipped a coin and it landed on it's edge and just stood there, i'm still waiting for it to fall one way or the other, maybe thatmeans I should buy one of each.I appreciateeveryones input, i'ts been alot of help. This is a great site.
