Fish in red sauce good; haven't tried it with bass and catfish though.

Learned this from a man in upstate New York
Fillet Bass...soak in salt water for about 1 hour before freezing
When ready to cook

Thaw bass and soak in buttermilk over night
Rinse fillets and dry with paper towel
Heat peanut oil to Med. high #7 on our stove
Mix up a flour mixture of salt , pepper , garlic salt dried onions {Dredge fillets}
Now dredge in an egg and milk mixture { 3 eggs and 1/2 cup of milk}
Now dredge in Panko Crumbs..

Fry to golden brown on both sides..folks who don't like fish like these/Make great fish sandwiches..

SAMS carrys a great fish fry mixture for 10.00...which I now use instead of Panko Crumbs..good for 20 fish frys easily.
